The small bits that float in cider, apple or by product of the brewing process?
Right, so basically I'm referring to the small pieces of white substance that float near the bottom of a pint of good cider, normally this occurs only when you've had a pint from the end of the cask.
Now I have some friends who believe that this is actual pieces of apple that have come through the system in tact, I however believe that it is merely a by product of the brewing process, can anyone shed some insight on this problematic dilemma?
It's bits of apple dust that coagulate together over time. They tend to be fractionally heavier than the rest of the cider, so you get more at the bottom of the cask.
It might be yeast, but since I've seen the same thing in cider that hasn't really fermented, it's unlikely. Plus, some yeasts are top fermenting, so they'd stay at the top until raked off.
Filtering does not take out all particulates...it depends what the mesh size of the filter is - as to what is removed or what goes through.
